Moroccan Squash and Chickpea Stew



The smell of this stew simmering filled the house with the most fabulous aroma ever.  No, I mean it.  I am hungry all over again just remembering it.

The recipe is from Mom Filter and I followed it pretty much exactly except that I didn't have preserved lemons.  I grated some lemon peel and immersed chunky pieces of lemon into the stew instead, which I later forgot to mention to the people eating it.  Oops, don't eat the chunks of lemon.  :)





The recipe called for cinnamon which I don't always like in savory dishes, but this was perfect.  If you don't like it, try just a small bit - if you do like cinnamon, go crazy, it really makes this dish.


I served it over couscous but next time I wouldn't bother, I would just enjoy the stew.  It was that awesome.



The preserved lemons had me curious so I am going to take a stab at making some of those.  I've never seen them in any of our grocery stores.  Maybe they're more gourmet than small-town Beamsville, lol.  Have you ever seen them or used them in a recipe?

Oh this looks amazing! I am pinning it!! and will hopefully find some of these veggies at the farmers markets starting pretty soon!! I have never heard of lemon preserves, keep us updated what you find out! :-)

Yum, It does look good! I haven't heard of preserved lemons either. It would be interesting to make some. I bet your stew made you feel are warm and happy.:)
